This is an amazing salad, a pleasure in taste and colour. I made it recently with beautiful organic radishes we got in our food box, delivered by our friends at Peach and Pear.
It works very well as a salad on its own or as a salad accompanying another dish, In my case a Swordfish tagine with potatoes, tomatoes and olives. But here for you Pink:
After washing and trimming the radishes, slice them finely. It takes some time, but it is a nice thing to do- the different shades of red and pink colour mixed with white are a feast for the eyes. Take marinated artichokes and cut them in slices or small chunks too. In a bowl mix mayonnaise, salt, pepper, olive oil and balsamic vinegar. Mix the radishes and artichokes with some salad leaves. You can choose a variety that you like.. Combine it all with the dressing, mix lightly and leave for some ten minutes so the different tastes develop and mix nicely together. The dressing melts with the red colour and turns it pink. Tastes amazing + Beautiful!
